Summer Desserts: Ice Cream Treats

Deep Fried Ice Cream
Coating: cornflakes, vanilla wafers, graham crackers, cinnamon toast crunch, shredded coconut, or chopped nuts.
The classic ice cream choice for fried ice cream is vanilla but other flavors would still be delicious as well. Below are a few.
Chocolate ice cream coated in crushed Oreos
Coffee ice cream
Strawberry ice cream
Chocolate chip ice cream coated in crushed chips ahoy
First your going to make 1/4 cup scoops of your ice cream flavor. Than coat them with your choice of coating. Freeze the ice cream balls for 1-2 hours. (Make sure to use cookie sheets or wax paper when putting them in the freezer.)
After 2 hours remove the coated balls of ice cream from the freezer. You will coat them with beaten eggs and than cover with more of you choice of coating. (Repeat twice)
Return the ice cream balls to the freezer for a minimum of 3 hours.
(If you want to store the coated ice cream balls for a longer period of time, wrap each ball with plastic wrap and place them in a freezer bag.)
4. When ready to fry, heat the oil in a deep-fryer or deep pot. Fry one ball of ice cream at a time (leave the other balls in the freezer) for 10-15 seconds, until golden. Serve immediately or return to the freezer.
5. When finish drizzle with chocolate sauce, add whipped cream, and top it with a cherry for cuteness.
6. Eat and enjoy. Than repeat.

1.5 quarts (6 cups) of coffee ice cream, slightly softened
Whipped Cream
1 cup cold heavy cream
1/2 cup powdered sugar
1/2 tsp vanilla extract
Chocolate Fudge Sauce
1 cup semisweet chocolate chips
pinch of salt
1/2 cup sweetened condensed milk
2 Tbsp unsalted butter, cubed
2 Tbsp heavy cream
1/2 tsp vanilla extract
1 Tbsp light corn syrup
