Homemade 'Little Pizzas' recipe


My mom tells me that when I was little, I wanted to eat pizza ALL the time. Who could blame me? Gooey cheese, thick sauce, and spicy pepperoni make for a tantalizing meal! But I didn’t want to eat the bread, and not just the crust: I would pick off all the cheese and pepperonis from the pizza and then throw away the rest. So, one day, my mom decided to concoct some homemade, bite-sized pizzas on saltine crackers (which I would eat). I loved them, and my childhood meal of “Little Pizzas” was born! It was a quick, easy, and inexpensive way to serve me my favorite food. At 14-years-old, I still love them, and my mom now uses whole grain crackers and chia seeds to make a more healthful, fiber-full version. Here is her recipe:

LITTLE PIZZAS

INGREDIENTS:

  • Saltine crackers

  • Pizza or spaghetti sauce (approximately 2 tbsp/8 crackers)

  • Grated Parmesan cheese

  • Shredded cheddar cheese

  • Turkey pepperoni

  • OPTIONAL: Chia seeds (thickens sauce and adds about 1 gram of fiber per tsp) and whole grain crackers

PREPARATION:

  • Place desired number of crackers on cookie sheet (my mom usually does 12 for me).

  • Mix sauce, chia seeds (optional), and Parmesan cheese in a microwave-safe bowl.

  • Heat in microwave until warm (approx. 30-45 seconds).

  • Spread sauce mixture on crackers.

  • Sprinkle crackers with shredded cheddar cheese.

  • Place one pepperoni on each cracker

  • For a cheesier option, top with more shredded cheddar cheese.

  • Broil in an oven until cheese melts.
