Recipe: Korean Mandu

Mandu are traditional Korean dumplings containing various mixtures of meat and vegetables which can be steamed, deep-fried, or boiled. This recipe gives you two choices on how to cook the dish. It also gives a delicious recipe for a sauce to dip or pour over your dumplings.

Ingredients:

For the Sauce:

1 tablespoon soy sauce

1 teaspoon vinegar

1 tablespoon water

1/2 teaspoon sugar

pinch of black pepper

pinch of red pepper flakes

For the Dumplings:

salt, to taste

1 medium-sized zucchini, minced

1/2 pound ground pork

1/4 pound ground beef

8 ounce mushrooms, minced

1 small onion, minced

1 tablespoon minced ginger

1 tablespoon sesame oil

1 egg, beaten

1 tablespoon all-purpose flour

1/2 teaspoon pepper

40 dumpling wrappers

vegetable oil, for frying

Preparation:

1. Have two bowls of cabbage and zucchini separated. Sprinkle salt over both bowls and set them aside for 15 minutes. Squeeze out excess water from the two bowls.

2.Combine the two with the rest of the ingredients into one bowl, except the wrappers and vegetable oil. Season with salt and mix by hand.

3.Place 1 teaspoon of filling (mixed ingredients) onto a wrapper.

4.Wet the edges of the wrapper with water and fold over into a half-moon shape. Make sure there is no air in it. Continue filling wrappers until done.

5. For deep-fried dumplings, heat up vegetable oil in a deep skillet (enough to flip dumplings) at 350 degrees. Fry on each side for 2-3 minutes until golden brown. Serve with sauce.

6.For boiled dumplings, heat a pot of water until boil over high heat. Put in the dumplings a few at a time while stirring do it does not stick to the bottom. Cook until they float. Serve hot with sauce.
