Quick healthy snack to go
Do you ever ask yourself what kind of quick healthy snack can you make? I have one in mind, a Cinnamon Vanilla Granola. A delicious snack sprinkled over Fresh fruit or yogurt.
The ingredients are:

3 cups of old fashioned oats
2 cups of quick oats
1 cup of chopped pecans, sliced almonds or sunflower seeds
½ cup toasted wheat germ
¼ cup of maple syrup
2 table spoons of Mazola corn oil
2 table spoons of pure vanilla extract
4 teaspoons of ground Saigon cinnamon
1 teaspoon ground nutmeg
1 cup of dried cranberries 9 or raisins or other dried fruit
Directions
Combine old fashioned oats, quick oats, pecans and wheat germ in a large bowl. Combine maple syrup, oil, vanilla, cinnamon and nutmeg in a small bowl. Pour over oat mixture and stir it to the coat, then spread it evenly on a greased baking sheet.
Bake at 300 degrees F to 50 to 60 minutes, stirring every 15 minutes until the oats are toasted.
Remove from the oven and stir in dried fruit, cool in pan on wire rack and store in airtight container.
Serving suggestion: to make yogurt parfaits, layer 6 ounces vanilla yogurt, ½ cup mixed fresh or frozen fruit and ¼ cup of granola.
