Quick healthy snack to go

Do you ever ask yourself what kind of quick healthy snack can you make? I have one in mind, a Cinnamon Vanilla Granola. A delicious snack sprinkled over Fresh fruit or yogurt.

The ingredients are:

  • 3 cups of old fashioned oats

  • 2 cups of quick oats

  • 1 cup of chopped pecans, sliced almonds or sunflower seeds

  • ½ cup toasted wheat germ

  • ¼ cup of maple syrup

  • 2 table spoons of Mazola corn oil

  • 2 table spoons of pure vanilla extract

  • 4 teaspoons of ground Saigon cinnamon

  • 1 teaspoon ground nutmeg

  • 1 cup of dried cranberries 9 or raisins or other dried fruit


  • Combine old fashioned oats, quick oats, pecans and wheat germ in a large bowl. Combine maple syrup, oil, vanilla, cinnamon and nutmeg in a small bowl. Pour over oat mixture and stir it to the coat, then spread it evenly on a greased baking sheet.

  • Bake at 300 degrees F to 50 to 60 minutes, stirring every 15 minutes until the oats are toasted.

  • Remove from the oven and stir in dried fruit, cool in pan on wire rack and store in airtight container.

  • Serving suggestion: to make yogurt parfaits, layer 6 ounces vanilla yogurt, ½ cup mixed fresh or frozen fruit and ¼ cup of granola.
