Garden Summer Salad

In a large bowl, combine the cauliflower, carrots, onion, tomatoes and zucchini. In a small bowl, whisk the remaining ingredients. Pour over vegetables and toss to coat.

Cover and refrigerate for at least 2 hours, stirring occasionally. Serve with a slotted spoon

Corn Saute


1 tablespoon canola oil, 1/2 cup chopped green onions (about 4), 1 garlic clove, minced, 1 cup sliced fresh okra (about 4 ounces), 1 cup chopped red bell pepper (about 1), 1 cup fresh corn kernels, 1 (15-ounce) can black beans, rinsed and drained, 1/3 cup minced fresh cilantro, 1/8 teaspoon salt, and 1/8 teaspoon freshly ground black pepper

Heat the oil in a skillet over medium-high heat. Add the vegetables and saute until crisp-tender, about 5 minutes. Sprinkle with fresh cilantro before serving.
